Jairo Arcila - Colombia - Naturally Decaffeinated, Fruity & Juicy

These beans are grown and processed in the Quindio region of Colombia by Jairo Arcila, a third-generation coffee producer. His sons Felipe and Carlos started Cofinet with the goal of aiding farmers in producing lots like this one. The beans from this Castillo lot were naturally seed-dried inside the cherry. From there, they were sent off for sugarcane ethyl acetate (EA) decaffeination treatment, a natural process that leverages molasses fermentation to dissolve caffeine.  When the skin and fruit of the coffee cherry are left intact throughout fermentation and drying, that fruit begins to break down, producing delicate florals and fruit notes which survive the roasting process. While decaf is rarely applied to specialty grade coffee, Cofinet is taking a different approach: providing the richness of carefully-roasted coffee without the caffeine. This roast is best described as fruity and juicy, with notes of guava, molasses, and fruit punch.

Secret Affair - South America & Ethiopia Blend - Caffeinated, Silky & Balanced

This coffee arrives at our roastery in the form of a dried green seed that was recently inside the cherry/berry of the coffee plant. Secret Affair is a blend of South American beans and Ethiopian beans that are processed through traditional washed-process techniques. By lightly roasting dense, high-elevation beans, this process creates a brighter and sweeter flavor profile. Whether served from a cart or a cafe, the intention of this blend is to showcase a modern and dynamic coffee experience. Secret Affair has notes of sweet lemon and honey.

Fruity Secret Affair - South America & Ethiopia Blend - Caffeinated, Wild & Fruity

Fruity Secret Affair is the result of an experimental process called co-fermentation, in which coffee producers allow different varieties of fruit to ferment with the coffee beans. In this roast, the Secret Affair blend is co-fermented with Jairo Arcila beans and peach, creating layers of flavors that compliment the lighter notes of the coffee itself. This blend is described as wild and fruity, with a complexity that provides a unique and memorable coffee experience.
